Ingredients

  • Beef:
  • 4 x 200g Angus Reserve Sirloin
  • Salt and pepper to taste
  • Salad with Roasted Rice:
  • 1 punnet Perfection Fresh Monterosa Heirloom Tomatoes, sliced into halves
  • ½ bunch watercress or watercress shoots, or wasabi leaves if available
  • 2 kaffir lime leaves, chiffonade
  • ½ cup mint leaves
  • ½ coriander leaves
  • ¼ bunch spring, finely sliced on an angle
  • Splash of Rio Vista Extra Virgin Olive Oil
  • 4 Perfection Fresh Qukes® Baby Cucumbers or 1 Perfection Bambino® Wombok Heart shredded into long juliennes
  • Roasted rice powder
  • Hot and Sour Dressing:
  • 150ml lime juice
  • 50ml fish sauce
  • 1 tsp chilli powder

Method: 1. In a bowl mix lime juice, fish sauce and chilli powder and mix well. It should taste hot and sour and salty 2. Cook steak to medium rare and let it rest. Slice into even pieces 3. Drizzle the prepared dressing over the steak 4. Mix cucumber, mint, coriander, lime leaf and tomatoes in a bowl. Dress with olive oil and more dressing 5. Garnish with salad and roasted rice powder
