1. In a flat-bottomed dish, add the coffee and liqueur and set aside 2. Separate the eggs and whisk the egg whites until firm peaks form, then set aside 3. Install the Whisk in the iCompanion bowl. Add the castor sugar and cream and set at Speed 6 for 60 seconds 4. Add the egg yolks and mascarpone and set at Speed 6 for 60 seconds. Gently add the whisked egg whites and set at speed 2 for 2 minutes 5. Dip each finger biscuits into the coffee mixture for 2 seconds then place in a serving bowl (Do not over soak the biscuits as they are very absorbent and will fall apart, 2 seconds is enough) 6. Arrange the biscuits to completely cover the base of the bowl. Cover this layer with the Cheese and egg mixture. Repeat with a second layer of biscuits then the Cheese mixture. 7. Finally, sprinkle cacao over the top. 8. Place in the fridge for at least two hours before serving.
