1. Peel and roughly chop the onion and garlic. Peel the carrots and cut in 1/2-inch pieces. Crush the lemongrass stick using a knife.
2. Place water, beef broth, onion, carrots, ginger, garlic, lemongrass and cilantro in the bowl fitted with the mixer. Launch the P2 simmer program at 200°F for 25 minutes.
3. After 20 minutes, add the shrimp and cook the remaining 5 minutes.
4. Serve in bowls garnished with sprigs of cilantro.
