Place each chicken breast between two sheets of cling fi lm and beat as thin as possible, but without it breaking apart. Cut each breast in half widthways. Mix the fresh goat cheese with the cream and the mint. Season with salt and pepper. Spread this mixture onto each chicken breast. Place on a spinach leaf and roll up; spear with a cocktail stick to secure. Put in basket no. 1.
Steam for 15 minutes with the starter and the dessert.
Place the chicken on plates and remove the cocktail sticks.
