Cinnamon Honey Chicken with a Turnip and Fig Parfait

  • 2 small white turnips, thinly sliced
  • 2 tablespoons fresh chives, chopped
  • 4 dried figs, thinly sliced
  • 160 g boneless chicken breast
  • 3 tablespoons runny honey, divided
  • 2 tablespoons walnut oil, divided
  • 2 pinches ground cinnamon
  • 2 pinches ground pepper
  • 1 teaspoon fresh tarragon, finely chopped
  • 4 slices cooked ham
  • 1 tablespoon light or single cream
  • Salt and pepper

Marinate the turnips in a little oil with the chives. Season. Put the sliced turnip in the steam basket, arranging them like the petals of a ower; placing the sliced figs in the centre. Mix 1 tablespoon of honey, 1 tablespoon walnut oil, cinnamon, pepper and tarragon. Pound to attenthe chicken breast and brush with the honey and oil mixture. Roll up the chicken and wrap in the ham. Secure with string.

Steam for 15 minutes with the starter and the dessert.

Just before serving, coat the vegetables with a spoonful of cream. Coat the chicken with a spoonful of warm honey and the remaining walnut oil.
