Ingredients

  • 2 cups all-purpose flour
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 3/4 cup butter, softened
  • 1/2 cup packed brown sugar
  • 3/4 cup granulated sugar, divided
  • 1 egg
  • 1 Tbsp cinnamon
  • 1/2 Tbsp ground ginger

Preparation

1. Place all ingredients, except 1/4 cup sugar, in the bowl fitted with the kneading/crushing blade. Mix at speed 8 for 2 minutes 30 seconds. Form the dough into a ball and wrap in plastic wrap. Refrigerate for 2 hours.

2. Preheat the oven to 300°F.

3. Form the dough into 1 Tbsp. size balls. Roll the balls in remaining 1/4 cup sugar and place on a cookie sheet lined with parchment paper. Flatten slightly with the bottom of a glass.

4. Bake for 12-14 minutes or until set. Cookies should be soft at the end of baking; they will become crisp as they cool.
