Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 2 Tbsp sugar
  • 1/4 cup chilled butter, diced
  • 1 cup buttermilk

Preparation

1. Preheat the oven to 425°F. Grease and flour an 8 x 8-inch pan.

2. Place the flour, baking powder, salt, baking soda and sugar in the bowl fitted with the kneading/crushing blade. Pulse for 3-4 seconds to blend dry ingredients. Add butter and mix at speed 9 for 30 seconds or until crumbles form. Gradually add the buttermilk through the opening on the lid and continue mixing at speed 9 until the dough just comes together.

3. Remove the dough from the bowl and place on a floured surface. Knead lightly and press dough out to a 1-inch thick round. Using a 2-inch round cutter, cut rounds from the dough and place in the pan touching each other. Bake for 15-17 minutes or until golden. Serve with jam and cream.
