Ingredients

  • 4 tbsp of rapeseed or sunflower oil
  • 500 g of turkey breast strips
  • 240 g of quinoa and bulgar wheat mix
  • 500 ml of vegetable stock
  • 50 g of spring onions, finely sliced
  • 100 g of watercress, roughly torn
  • 100 g of pomegranate seeds
  • 120 g of cashew nuts, lightly toasted
  • 2 avocado(s), diced
  • 2 tbsp of lime juice

Preparation

Prepare the ingredients.

Add half of the oil.

Lightly brown the turkey (in batches if required).

Add the grain mix and stock. Stir well to combine.

Cooking time: 5 min.

Stir in the remaining ingredients. Serve and enjoy!
