Ingredients

  • 4 EGG YOLKS
  • 50 g CASTER SUGAR
  • 400 ml DOUBLE CREAM
  • 1 TSP VANILLA (GROUNDED OR FLAVOURING)
  • 100 g BROWN SUGAR

Preparation

Preheat the oven to 120 °C. Place the egg yolks, sugar and vanilla in the bowl fitted with the whisk and mix at speed 7 for 1 min.

After 30 s, add the cream through the lid. Share the mixture among individual dishes.

Bake in a bain-marie (pan with water in) for 35 mins. Leave to cool and place in the fridge.

Sprinkle the brown sugar over the crème brulées and place under a blowtorch or grill for 2 mins.

TIP You could add crushed pistachios before serving.
